Raw Zucchini

1 medium sized green zucchini squash
1 tablespoon fresh lemon juice Salt and pepper, to taste fresh basil or arugula leaves, sliced 1/4-inch
Trim ends of zucchini squash; use a mandoline with a 1/8-inch wide tooth blade
to make long lengthwise spaghetti-like strands. If you do not have a mandoline use a large knife
to cut thin lengthwise slices then cut them into lengthwise julienne strips to resemble pasta.
Put into a bowl,
drizzle with lemon juice, mix with salt and pepper. Twirl small amounts on a long-tined fork, slip off onto serving plates piling up as high as
possible for a gourmet presentation,
garnish
with basil or arugula leaves and serve with a main
entree it is delicious.
