Twice Baked Sweet Potatoes (or yams)

cut baked potato in half... Scoop out flesh... add sour cream, salt, butter and
cayenne... fill potato shells... and bake twice
serves 2
1 large sweet potato (or yam) flour for drenching 2 tablespoons Sour Cream Salt, to taste 1
tablespoon butter, softened
pinch of cayenne Fresh Parsley for garnish
Peel the sweet potato (or yam), pat dry and roll
or drench in flour, brush off excess and bake on a sheet pan at 350° for 45 minutes or until tender.
When cool enough to handle, cut baked potato in
half lengthwise. Scoop out flesh into a bowl leaving a 1/4-inch shell, add sour cream, salt, butter and
cayenne. Trim sweet potato shells to resemble "boats", fill with potato mixture.
Return potatoes to the oven and bake twice at 350° for 15 minutes.
Garnish with parsley and serve with a
meat course.
