Twice Baked Sweet Potato Boats, Potato Recipe




Yam Boats, Twice Baked Sweet Potato (or Yams)

Potatoes or Yams can be used





serves 2

1 large yam (or sweet potato)
flour for drenching
2 tablespoons Sour Cream
Salt, to taste
1 tablespoon butter, softened
pinch of cayenne
Fresh Parsley for
garnish

Peel yam, pat dry and roll or drench in flour, brush off excess and bake on a sheet pan at 350° for 45 minutes or until tender.

When cool enough to handle, cut in half lengthwise. Scoop out flesh into a bowl leaving a 1/4-inch shell and add sour cream, salt, butter and cayenne mixing well; fill the shells.  Trim if necessary to resemble a boat.  Place boats back into the oven and bake again at 350° for 15 minutes.  Garnish boats with parsley and serve with a meat course.
