Twice Baked Sweet Potato (Yams) Boats

Recipe Type: potato, yam, sweet potato, cream, side dish

Prep Time: 10 min
Total Time: 10 min
Serves: 2

Ingredients:

1 large yam or sweet potato
flour for drenching
2 tablespoons Sour Cream
Salt, to taste
1 tablespoon butter, softened
pinch of cayenne pepper
Fresh Parsley
for
garnish

Instructions:

Preheat oven to 350 degrees F.

Peel potato, pat dry and roll or drench in flour, brush off excess. Bake on a sheet pan for 45 minutes or until tender.

When cool enough to handle, cut in half lengthwise. Scoop out flesh into a bowl leaving a 1/4-inch shell. Add to the bowl sour cream, salt, butter and cayenne pepper mixing well.

Spoon mixture into shells. Trim ends of potato if necessary to resemble a boat or canoe. Place yam boats back in the oven and bake for an additional 15 minutes. Garnish boats with parsley and serve with a meat course.

Wine recommendation: Pinot Gris; Chardonnay
