Use a melon baller to make round balls from the watermelon. Freeze the watermelon balls on a sheet pan 1-inch apart; transfer the frozen balls to a covered container. Serve them partially frozen.

Use to garnish salads, main entrees, desserts, etc.  They keep for weeks.
