I love roasted turkey breast meat, there is always
one in my freezer,
they are low in fat.
When I need one, I thaw it out, pop into the oven and roast to perfection being
careful to not over cook, keeping them moist. The meat is so
flavorful
when roasted correctly. When they cool I simply cut into large
chunks then wrap and freeze. They are so handy to serve for
sandwiches or any dish.

Turkey
& Brie Croissant Sandwich

Serves 1
1 large croissant sandwich roll cut in half
horizontally
1 tablespoon Best Food (Hellman's) mayonnaise
1/2 teaspoon parsley, chopped fine
1/2 teaspoon basil leaves, finely chopped
1/2 teaspoon chives, snipped
1/4 pound deli turkey breast, thinly sliced
1 large slice Brie cheese, rind removed
1 slice red tomato
1 red onion slice, slivered thinly
Salt and pepper, to taste
curly leaf lettuce, arugula or Romaine
In a small bowl mix mayonnaise with parsley, basil and chives; spread on
both croissant halves.
Layer
the sandwich with turkey, Brie cheese, tomato and red onion.
Season with salt and pepper, add
the lettuce, close up the sandwich, cut and serve.
Wine recommendation: Cabernet, beer
