serves 2
1 cup zucchini, diced 1 teaspoon butter
Salt and pepper, to taste 1/8 teaspoon dill weed, or mint 1 cup lettuce shredded, for garnish (optional)
4 long chives, for garnish (optional)
Cut 1/3 off top of globe zucchini, scoop out
centers leaving a
1/4-inch shell.
In a saucepan over medium-high heat melt butter, combine diced zucchini, salt, pepper and dill
weed or mint;
sauté until fork tender. Spoon into zucchini shells, serve on a bed of shredded lettuce, add
a chive garnish and serve.
