Stuffed Round Globe Shaped Zucchini
 Side Dish Recipe

serves 2

2 Globe Zucchini squash, plus an additional 1 cup diced
1 teaspoon butter
Salt and pepper, to taste
1/8 teaspoon dill weed
1 cup lettuce shredded, for garnish (optional)
4 long chives, for garnish (optional)

Cut 1/3 off top of the squash (save for garnish), scoop out the pulp leaving a 1/4-inch shell into a saucepan with the butter, the additional 1 cup diced zucchini, salt, pepper and dill weed.  Saute over medium high heat until fork tender.  Spoon into shells and serve on a bed of shredded lettuce; lean the tops against the squash, add chives for garnish and serve.
