Spaghetti squash is a unique side dish of pasta like strands resembling spaghetti. When cooked correctly it is slightly crunchy and can be enhanced further with this recipe of butter, garlic and crispy bacon.

How to Cook Spaghetti Squash Recipe

Recipe Type: spaghetti squash, bacon, vegetable, side dish

Total Time: 10 min

Prep Time: 10 min
Yield: 1-1/2 cups

Ingredients:

1 small spaghetti squash (1-1/2 lb.)
2 slices bacon, diced
1 tablespoon butter
1 small garlic clove, minced
1/4 teaspoon Kosher salt
1/8 teaspoon freshly cracked black peppercorns
1 teaspoon green onion
, sliced


Preparation:

Cut spaghetti squash in half lengthwise, place on microwavable plate. Microwave on high 5 minutes. Remove from oven and let rest 5 minutes or until cool enough to handle. Discard seeds. Using a fork, remove flesh from shells (it will come out in spaghetti like strands) into a small bowl.

Fry diced bacon in a skillet until crisp. In a small microwavable bowl, microwave garlic and butter on high 25 seconds or until butter is melted. Add bacon, reserve 1 teaspoon for garnish. Stir in garlic-butter, salt and pepper to bowl of spaghetti squash and carefully mix together.

Garnish tops with reserved bacon and sliced green onion.
