Ingredients:
1 small spaghetti squash (1-1/2 lb.)
2 slices bacon, diced
1 tablespoon butter
1 small garlic clove, minced
1/4 teaspoon Kosher salt
1/8 teaspoon freshly cracked black peppercorns
1 teaspoon green onion, sliced
Preparation:
Cut spaghetti squash in half lengthwise, place on microwavable plate. Microwave on high
5 minutes. Remove from oven and let rest 5 minutes or until cool enough to handle. Discard
seeds. Using a fork, remove flesh from shells (it will come out in spaghetti like strands)
into a small bowl.
Fry diced bacon in a skillet until crisp. In a small microwavable bowl, microwave garlic and
butter on high 25 seconds or until butter is melted. Add bacon, reserve 1 teaspoon for
garnish. Stir in garlic-butter, salt and pepper to bowl of spaghetti
squash and carefully mix together.
Garnish tops with reserved bacon and sliced green onion.
