Smoked
Salmon Lollipops with Cream Cheese
Yield: 12 appetizers
6 ounces cream cheese, softened 12 slices smoked salmon, 2-inch rounds
fresh chives, snipped fine 12 acrylic sticks or popsicle sticks
Make 3/4-inch cream cheese balls, wrap in plastic,
twist into a ball, cover and
refrigerate. When firm wrap balls with smoked salmon slices maintaining a round
shape, dip both ends of cream cheese ball in
snipped chives.
Insert popsicle sticks into the base; insert sticks into an apple or eggplant
half and serve as an appetizer.
