Smoked
Salmon Lollipops with Cream Cheese
adapted from Art of Entertaining, Sebastien

Yield: 12
6 ounces cream cheese, softened
1/2 teaspoon dried thyme leaves
cracked black pepper, to taste 12 slices smoked salmon, 2-inch rounds
fresh chives, snipped fine 12 acrylic sticks or popsicle sticks
Mix
cheese, thyme and pepper together then place 1 tablespoon mixture in plastic
wrap,
twist into balls, cover and
refrigerate. When firm wrap each with smoked salmon maintaining a round
shape. Dip both ends of ball in
snipped chives, insert a popsicle stick into the base then stick into a halved apple
or eggplant and serve as an appetizer.
