I love white truffle oil...
Not only do these taste delicious, they look fantastic and are a snap to
prepare, they are so easy...
what could be more simpler than peeling away the centers of each potato for a unique presentation

Small
Red Potatoes

Serves 4 to 6
2 pounds small red potatoes, 3 to 5 per person
4 tablespoons butter, melted
1 tablespoon white Truffle oil
1 teaspoon coarse sea salt
freshly cracked black peppercorns to taste 1/4 cup chives, chopped for
garnish
Peel a strip around the middle of each potato,
(this can be done in
advance, keep the potatoes in cold water to prevent them from turning
brown).
When ready
to serve, drain them and put in a saucepan with a steamer basket and
steam until they are tender; test them by poking with the tip of a sharp
knife. Drain well, remove the steamer basket, add melted butter,
white truffle oil, salt and pepper; toss them carefully to coat.
Serve 3 to 5 potatoes per person depending on the size on individual plates and
garnish with chopped chives.
