Scalloped Potatoes baked in ramekins

Ingredients


4 cups potatoes, peeled, thinly sliced
1 cup sharp cheddar cheese, grated
Salt and pepper, to taste
1/2 cup heavy cream
4 teaspoons butter
8 lengthwise unpeeled 1/4-inch slices English cucumber

Sweet Potato Shoestring
garnish - optional 


Directions:


Preheat oven to 350 degrees F.

Butter 8, 4-ounce porcelain ramekins. Layer potato slices in each ramekin, sprinkle potatoes with salt and pepper, finishing with a layer of cheese on top. Add 1 tablespoon cream to each ramekin, dot tops with butter and bake for 35 to 40 minutes or until fork tender. Remove from oven and invert onto individual plates.

To Make Cucumber Garnish:
In a cucumber slice close to one end, cut a small crosswise slit large enough to thread the other end through (see my photo).
This can be done ahead of time. Wrap a cucumber slice around each scalloped potato serving threading one end through the cut slit. 

Top with a shoestring potato garnish that can be made in advance.

Wine recommendation: Pinot Gris; Chardonnay
