then wrap with a cucumber slice for a beautiful presentation...  
such an elegant entree and super easy to make

Scalloped Potatoes baked in ramekins

Serves 8

4 cups potato, peeled, sliced thinly
1-1/3 cup sharp cheddar cheese, grated
Salt and pepper, to taste
1/2 cup heavy cream
8 (1/2 cup size) ramekins
8 lengthwise unpeeled 1/4-inch slices English cucumber 
Sweet Potato Shoestring
garnish - optional 

Layer seasoned potatoes with grated cheese in buttered ramekins, add cream and bake at 350° for 35 to 40 minutes or until fork tender.  Remove from oven and invert onto individual plates.  

Cut a small crosswise slit in cucumber slice close to one end large enough to fit into the other end (see my photo).  Can be done ahead of time.  Wrap around scalloped potato threading one end through the cut slit. Top with a shoestring potato garnish that can be made ahead of time and serve.

Wine recommendation: Chardonnay; Sauvignon Blanc
