Scalloped
Potato Cheese Cups

Serves 8
4 cups potatoes, peeled, sliced thinly
1-1/3 cups sharp cheddar cheese, grated Salt and pepper, to taste 1/2 cup heavy cream
8 custard cups (1/2 cup size)
Cucumber Ring
(recipe follows)
Sweet Potato Shoestring
garnish - optional
Layer seasoned potatoes with cheese in buttered
custard cups; add cream and bake at 350° for 35 minutes.
Invert custard cups onto individual serving plates; wrap
each potato cup with a cucumber ring (recipe follows) threading one end through the cut slit. Top with a
shoestring potato garnish and serve.
Cucumber Ring
1 English cucumber
Slice 8 lengthwise cucumber slices 1/4-inch thick with a mandoline or large knife.
Cut a small crosswise slit close to one end large enough to fit the other end through
(see my photograph).
Wine recommendation: Chardonnay; Sauvignon Blanc
