Radish-Zucchini Garnish recipe

an easy make ahead dinner pleaser
Salad Greens (use Romaine or Butter Lettuce)
Radishes, ends trimmed, sliced very thin Green zucchini
squash, ends trimmed, sliced very thin lengthwise
Extra-virgin olive oil Salt, to taste Cracked black pepper
2-1/2-inch ring molds (I use clean 8 ounce tomato sauce cans, both ends removed)
Put ring mold on a plate, oil the inside. Sprinkle radish slices with salt,
pepper and oil, stand them up against inside of mold overlapping slightly. Can be
done ahead.
Season squash slices with salt and pepper, roll them up
then pull the center top up slightly to make a tower
(see my photo); fasten with a toothpick.
Can be
done ahead.
In a small bowl toss Romaine with extra-virgin olive oil, salt and
pepper. Carefully place inside the mold without
disturbing radish slices, slowly lift off the mold; remove
toothpick from zucchini roll, place on top the greens. Garnish plate with drizzles of olive oil and balsamic vinegar if
desired and serve.
