Radish Canapés with Salmon Mousse

Total Time: 10 min
Yield: serves many

Ingredients:

2-1/2 ounces Smoked Salmon
1 shallot, chopped fine
1 tablespoon celery, chopped
1/2 teaspoon fresh lime juice
1/2 teaspoon hot horseradish
1 tablespoon heavy cream
1/4 teaspoon salt
cayenne pepper, to taste
Red radishes, trimmed, sliced 1/4-inch
sliced green onion for garnish

Instruction:

In a mini food processor puree smoked salmon, shallot, celery, lime juice, hot horseradish, heavy cream, salt and cayenne pepper.

Spread mousse on radish slices with a knife or use a piping bag,
garnish with green onion slices and serve.

Wine recommendation: Pinot Gris; Chardonnay
