Salmon Mousse

2-1/2 ounces Smoked Salmon
1 shallot, chopped fine 1 tablespoon celery, chopped 1/2 teaspoon lime juice
1/2 teaspoon hot horseradish 2 tablespoons heavy cream 1/4 teaspoon salt
pinch of cayenne pepper Red radishes, trimmed, sliced 1/4-inch parsley or celery leaves for garnish
In a food processor puree smoked salmon, shallot,
celery, lime juice, horseradish, cream, salt and cayenne; cover and refrigerate
3 hours or overnight.
Spread smoked salmon mousse on radish slices, garnish with parsley or celery leaves and serve.
Wine recommendation: Gamay Beaujolais
