Canapés
with
Salmon Mousse

a super easy canapé to make
2-1/2 ounces Smoked Salmon
1 shallot, chopped fine 1 tablespoon celery, chopped 1/2 teaspoon fresh lime juice
1/2 teaspoon hot horseradish 1 tablespoon heavy cream 1/4 teaspoon salt
cayenne pepper, to taste Red radishes, trimmed, sliced 1/4-inch sliced
green onion for garnish
In a food processor puree salmon, shallot,
celery, lime juice, horseradish, cream, salt and cayenne. This can be
made 1 day ahead covered and refrigerated.
Spread mousse on radish slices with a knife or use a piping bag, garnish with green onion
slices and serve.
