Trader Joe's Grocery
then fills them making cute little appetizers for large groups...  a great idea!

Almond & Chicken Pita Pocket

Serves 12


8 ounces chicken breast, boneless, skinless
salt and pepper
a few drops Liquid Smoke
1 tablespoon butter
1 celery stalk, finely chopped
4 tablespoon green onion, thinly sliced 
1/3 cup red bell pepper, chopped finely
4 tablespoons mayonnaise
Zest from one lemon
3 teaspoons fresh lemon juice
1/8 teaspoon freshly ground black peppercorns
salt, to taste
1 (6) packet pita pockets
3 cups Arugula or Romaine lettuce sliced 1/4-inch 
2 tablespoons almonds, chopped and toasted
Lettuce leaves for garnish

Sprinkle chicken with liquid smoke and sauté in a small skillet over med-hi heat with butter until completely cooked; add salt and pepper, finely dice and combine in a small bowl with celery, green onion and red bell peppers. Stir in mayonnaise, lemon zest, lemon juice, pepper and salt.

Cut pita pockets in half horizontally then cut a very thin slice from the bottom of each to sit upright.  Fill each with sliced arugula or romaine lettuce and the smoked chicken mixture; top with toasted almonds and serve on a tray over a bed of lettuce leaves if desired.

Wine recommendation: Pinot Gris
