Truffle oil is
available all season long and fairly inexpensive, it is so flavorful possessing
a terrific aroma enhancing most any dish.
I like to grab the bottle and give a few shakes just before serving potatoes,
pasta, salads and appetizers.
It is much less expensive than actual truffles having an olive oil
base.
I am fortunate to have a Trader Joe's grocery store near my home to stock
up, I use it in many of my foods.
Make sure you add it at the last minute because heat destroys the flavor and
aroma
easy.... elegant.... Dinner

New Baby Potatoes with Truffle Oil

Serves 4 to 6
2 pounds small new baby potatoes
4 tablespoons butter, melted
1 tablespoon white Truffle oil
1 teaspoon coarse sea salt
freshly cracked black peppercorns to taste 1/4 cup chives, chopped
Steam potatoes until fork tender, drain well and toss gently with the butter,
truffle oil, salt and pepper. Put 3 to 5 on each plate, sprinkle with
chopped chives and serve.
