Mini Pizza with Pepperoni 
and Cheese Appetizer Recipe

1 - 12-inch Boboli thin Pizza crust
1 teaspoon extra-virgin olive oil
1/2 pound Fontina cheese, grated
1/2 package Turkey Pepperoni slices
1 cup leeks or white onions, sliced thinly
1 cup Roma tomatoes, chopped
2 teaspoons dried thyme
Salt and pepper, to taste

Brush crust with oil to produce a crisp crust.  Add cheese, pepperoni, onion, tomatoes, dried thyme, salt and pepper.

Bake on bottom rack of oven at 450° for 15 minutes, cut into mini pizza appetizer pieces and serve.

Wine recommendation: Pinot Noir
