Mini Pizza Appetizer
with Turkey Pepperoni and
Fontina Cheese

Yield: 12-inch pizza
Ingredients:
12-inch Boboli thin Pizza crust
1 tablespoon extra-virgin olive oil
1/2 pound Fontina cheese, grated
1/2 package sliced Turkey Pepperoni chopped finely
1 cup leeks or white onions, thinly sliced
1-1/2 cups Roma tomatoes, finely chopped
2 teaspoons dried thyme
Salt and pepper, to taste
Instruction:
Preheat oven to 450 degrees F.
Spread Boboli pizza crust with extra-virgin olive oil to produce a crisp crust. Place on a baking sheet or
pizza pan and layer with grated cheese, chopped turkey pepperoni, leeks or onion slices, chopped tomatoes,
dried thyme, salt and pepper.
Position oven rack on the bottom setting and bake for 15 minutes. Remove
from oven and let rest for 5 minutes before cutting into mini pieces or any shape you like, then serve.
