easy... can also
be served for lunch with a green salad
Makes 24
6 slices white sandwich bread 3 eggs 3 tablespoons milk
1/2 cup ham, chopped 1/2 cup Swiss cheese, shredded 1 teaspoon thyme, crushed 1/8 teaspoon cracked black pepper fresh chives, snipped for garnish
Spray 2 mini muffin pans with vegetable spray. Remove crust from bread,
cut slices into four squares making 24
pieces. Use a rolling pin to flatten each slice; press one bread square
into each mini muffin cup. Set aside. Can be done ahead of time. In a small bowl beat eggs; add milk,
chopped ham, shredded Swiss cheese, thyme and black pepper mixing
well. Divide mixture evenly putting approximately 2 teaspoons
in each muffin cup. Bake at 325° for 13 to 15 minutes or until eggs are set.
Mixture will rise
during baking then fall slightly when removed from the oven. Place quiche appetizers on a serving
plate, garnish with chives and serve. for another try this one:
