Pea
Pod and Carrot Coin Garnish

5 pea pods, per person, strings removed, ends trimmed
3 carrot coins (slices), per person, peeled, cut into 1/4-inch slices
Boil pea pods 1 minute, drain, plunge into ice water, drain again, set aside.
Boil carrot coins 2 minutes, drain, plunge into ice water, drain again, set aside. They can all
be prepared 1 day ahead. Serve 5 pea pods with 3 carrot coins (slices) on individual plates
