Snow Pea and Carrot Garnish

Ingredients:

Snow peas, 5 per person, strings removed, stem ends trimmed
Carrot, peeled, sliced 1/4-inch, 3 per person
Vegetable oil
Kosher salt
Freshly cracked black peppercorns


Preparation:


Prepare an ice bath by filling a large bowl with ice cubes and cold water; set aside. Cook vegetables in separate saucepans in boiling salted water until al dente (tender crisp). Drain, plunge immediately into ice bath to stop the cooking; drain again.

Drizzle snow peas and carrot slices with a small amount of vegetable oil and toss lightly with salt and pepper. Arrange 5 snow peas and 3 carrot slices on each plate (see my photograph) alongside the main entree and serve.
