Stuffed Cucumber Slices Appetizer recipe and photograph by

1 English Cucumber, unpeeled 1/2 cup dates pitted, finely chopped
1/4 cup water 1/4 cup pecans or walnuts toasted, chopped Fresh herbs for garnish
Cut cucumber in half horizontally, trim ends, remove centers from both halves with a melon baller leaving 1/4-inch sides.
In a small saucepan bring water to a boil, add dates, reduce the heat and simmer 15
minutes; remove from heat and mash to a smooth consistency.
Add toasted chopped nuts blending well, stuff into the two hollowed out
cucumbers. They can be covered and refrigerated at this
point until ready to serve. Slice
1/4-inch thick, garnish with fresh herbs and serve.
