Stuffed Cucumber Slices Appetizer recipe and photograph by

1 English Cucumber, unpeeled 1/2 cup dates pitted and chopped into small pieces
1/4 cup water 1/4 cup pecans or walnuts toasted and chopped Fresh herbs for garnish
Cut cucumber in half horizontally, trim ends, remove centers with a melon baller leaving 1/4-inch sides.
In a small saucepan bring dates and water to a boil, simmer 15 minutes; mash to a smooth consistency.
Add toasted chopped nuts; stuff the two cucumber hollowed out halves with the date stuffing. They can be covered and refrigerated at this
point until ready to serve.
Slice stuffed cucumber
halves 1/4-inch thick, garnish with fresh herbs and serve
this sweet appetizer.
