Cucumber

makes approximately 10
English cucumber, unpeeled
1/4 cup crabmeat 1 teaspoon lime zest 1 teaspoon lime Juice 1 tablespoon green onion, sliced fine
1/4 cup celery. diced fine 1 tablespoon olive oil Salt & Pepper, to taste Fresh herbs for garnish
Cut cucumber crosswise into 1-1/2-inch slices, then cut these slices in two diagonally (see my photograph).
Scoop out centers with a melon baller leaving 1/4-inch walls. Salt
lightly; mix the crab, lime zest, lime juice, onion, celery,
oil, salt and pepper together then fill each cup. Garnish with herbs and serve.
Wine recommendation: Chardonnay
