Smoked Salmon Mousse Cucumber Slices Appetizer








this smoked seafood goes very well with fresh garden English cukes, 
add a few other ingredients to make a smoked mousse and you have a delicious hors d'oeuvre.
When we lived in Oregon my husband maintained a small vegetable garden which included these tasty cuke veggies, 
this type is easier to digest, almost seedless, not like the other common variety, 
the seeds are what causes bitterness especially in an aging 'old' cuke. 
When we purchase them at the supermarket, 
they are usually wrapped in plastic to reduce water loss keeping them fresher longer, 
they are not waxed, so there is no need to peel them, just wash thoroughly and enjoy!

1 English cucumber, unpeeled
salt
2 ounces smoked Salmon, shredded and minced
1 tablespoon heavy cream
2 ounces cream cheese softened
1/4 teaspoon fresh Lime Juice
1 shallot, chopped finely
3/4 teaspoon fresh dill weed chopped
Salt & Pepper, to taste
garnish with dill weed or diced red pepper or tomato

Score cucumber skin lengthwise with tines of a fork, slice 1/2-inch thick; scoop out centers of each slice with a melon baller leaving 1/4-inch walls, lightly salt them and place upside down to drain on a paper towel.

In a food processor combine smoked salmon, heavy cream, cream cheese, lime juice, shallot and dill weed until it is of a mousse consistency.  Taste for seasoning and add salt and pepper accordingly.  Fill a piping bag fitted with a plain round tip, or spoon a small amount of the smoked salmon mousse mixture on the prepared cuke slices. Garnish with dill weed and serve.

Wine suggestion: Chardonnay
