Cucumber Goat
Cheese Mousse Boats Appetizer

easy to make... take to a party,
they are cute and refreshing
1 English cucumber
3 ounces goat cheese
2-1/2 tablespoons heavy cream
1/2 teaspoon dried thyme
1-1/2 teaspoons fresh parsley, chopped fine
salt and pepper to taste
a shake of garlic powder
chives, snipped
Score cucumber skin lengthwise with tines of a fork;
cut crosswise into 3/4-inch-thick slices, cut these in half making little
rocking boats; sprinkle lightly with salt, blot on a paper towel and set
aside.
Mix goat cheese, heavy cream, thyme, parsley, salt, pepper and garlic
powder together.
Spoon on to slices or use a piping bag; top with fresh chives
and serve.
