1 English cucumber, unpeeled
2 ounces smoked salmon
4 ounces cream cheese, softened
2 tablespoons heavy cream
1-1/2 teaspoons horseradish
1 teaspoon fresh lime zest minced
1 teaspoon fresh lime Juice
Salt & Pepper to taste

Fresh herbs of your choice for garnish

Cut cucumber crosswise into 1-1/2-inch slices, then cut these slices diagonally (see my photograph). Scoop out centers with a melon baller making cucumber cups leaving 1/4-inch walls.

In a processor combine cream cheese, heavy cream, horseradish, lime zest, lime juice, salt, pepper and smoked salmon.  Fill cucumber cups with salmon mousse, garnish with fresh herbs and serve this appetizer.

Wine recommendation: Chardonnay
