Cucumber
Appetizer Cups filled with Smoked Salmon Mousse recipe and photograph by

1 English cucumber, unpeeled 2 ounces smoked salmon 4 ounces cream cheese, softened
2 tablespoons heavy cream 1-1/2 teaspoons horseradish 1 teaspoon fresh lime zest minced
1 teaspoon fresh lime Juice Salt & Pepper to taste
Fresh herbs of your choice for garnish
Cut cucumber crosswise into 1-1/2-inch slices, then cut these slices
diagonally (see my photograph). Scoop out centers with a melon baller making cucumber
cups leaving 1/4-inch walls.
In a processor combine cream cheese, heavy cream, horseradish, lime
zest, lime juice, salt, pepper and smoked salmon. Fill cucumber cups with salmon mousse,
garnish with fresh herbs and serve this appetizer.
