There is
something special about the taste combination of stuffed
vegetables. These cute little stuffed red balls paired with garden fresh basil and a moist
mild smooth textured white Italian cheese such as mozzarella makes
a very tasty appetizer.
This is an easy colorful hors d'oeuvre to put together and enjoyed by
everyone,
if you use cheese made from the milk of a water buffalo rather
than cow's milk,
it will be of a better tasting quality. Just pop one in your mouth! Make as many as you desire...

Stuffed Cherry Tomatoes recipe and photograph created by

Cherry Tomatoes Salt and pepper, to taste Mozzarella Cheese extra-virgin olive oil
Fresh Basil leaves sliced 1/4-inch
Cut and discard a small slice from the bottom of
each tomato so they will sit
level. Cut and discard a small slice off tops and
scoop out centers with the small end of a melon baller. Sprinkle insides with salt and pepper,
place upside down on paper towels to drain.
Stuff each tomato with a small amount of Mozzarella cheese, drizzle with
extra-virgin olive oil and top with freshly sliced basil leaves.
Serve on a platter,
garnish
with whole basil leaves.
