There is something special about the taste combination of stuffed cherry tomatoes.  These cute little red tomatoes paired with garden fresh basil and a moist mild smooth textured white Italian cheese such as mozzarella makes a very tasty appetizer.

This is an easy colorful hors d'oeuvre to put together and enjoyed by everyone, 
if you use cheese made from the milk of a water buffalo rather than cow's milk, 
it will be of a better tasting quality.  Just pop one of these in your mouth!

Stuffed Cherry Tomatoes

Cherry Tomatoes
Salt and pepper, to taste
Mozzarella Cheese
extra-virgin olive oil
Fresh Basil sliced 1/4-inch

Cut and discard a small slice from the bottom of each cherry tomato so that they will sit level. Cut the tops off each one and using a melon baller carefully scoop out the centers making a cup.  Sprinkle insides with salt and pepper then place upside down on paper towels to drain.  

Stuff each cherry tomato with a small amount of Mozzarella cheese, drizzle with extra-virgin olive oil and top each with freshly sliced basil and serve on a platter.
