If you are looking for a simple hors d'oeuvre for entertaining, this is it...  
not only is it easy to make, it is tasty with 
chopped onion, enhanced with fresh Thyme leaves and cayenne pepper for a 'kick'

You could cut the sandwich slices into different shapes using cookie cutters, 
toast them early in the day then apply the spread and bake when guests arrive...  it only takes a few minutes. 

It is great to serve before dinner or on your patio with wine.  Enjoy!

Asiago Cheese Puff Appetizer

Makes 20 

5 thin white sandwich bread slices
1 cup Asiago cheese, finely grated
2 tablespoons yellow or white onion, finely chopped
3 tablespoons mayonnaise
3/4 teaspoon fresh Thyme, finely chopped
pinch salt
dash of Cayenne pepper

Trim crusts from bread.  Cut 4 round (or square) pieces from each slice. Bake on a sheet pan at 400° for 3 to 4 minutes or until lightly toasted. 
This can be done in advance, covered at room temperature.

In a small bowl combine the next 6 ingredients and spread the Asiago mixture on the toasted bread.  Return them to the oven, bake 5 to 8 minutes or until puffed and golden. Serve hot or cold.

Wine recommendation: Pinot Gris
