Mesclun Salad
with Strawberries
and Pine Nuts recipe

serves 2
1 tablespoon extra virgin olive oil 1/2 teaspoon Raspberry wine vinegar
1/2 teaspoon balsamic vinegar Salt and pepper, to taste
2 cups Mesclun green salad 2 tablespoons chives, sliced 1/2-inch 5 - 6 large strawberries, sliced
2 tablespoons pine nuts, toasted 3-inch ring mold
Combine in a small
bowl olive oil, raspberry wine vinegar, balsamic vinegar, salt and pepper; set aside.
In a medium bowl combine mesclun greens, chives, strawberries and pine nuts.
Place a 3-inch ring mold on each plate and fill with mesclun greens
piling as high as possible. Drizzle with oil and vinegar mixture and serve.
Wine recommendation: Pinot Gris
