An easy salmon garnish to make,
all you need to do is roll up salad greens in a strip of salmon lox,
how easy is that!

Garnish, Salmon Lox with Greens
recipe and photograph by Peggy Bucholz for www.finedinings.com

For each serving:

4 to 5 small salad greens approximately 3" long
1/4 teaspoon extra-virgin olive oil
3 chives, 6" long
1 strip Salmon Lox, 1-inch x 4-inch
1 tablespoon mayonnaise
1 teaspoon water
1/4 teaspoon minced garlic
salt and pepper to taste

Toss salad greens with extra-virgin olive oil; place on a strip of salmon lox with chives.  Roll up and stand upright on a plate.

Mix together mayonnaise, water, garlic, salt and pepper; spoon a thick line of the mayonnaise mixture on plate in a wavy line (see my photograph).
This can be made in advance.

Serve the salmon lox garnish with
Salads or Lunches.

Wine recommendation: Chardonnay
