Ingredients:
4 to 5 baby spinach or arugula leaves, 3-inches long
1/4 teaspoon extra-virgin olive oil 3 chives, 6-inches long 1 strip Salmon Lox, 1-inch x 4-inch
1 tablespoon mayonnaise 1 teaspoon water 1/4 teaspoon minced garlic
salt and pepper to taste
Instructions:
Toss spinach leaves with extra-virgin olive oil;
place on a strip of salmon lox with chives. Roll up and stand upright on a plate.
Mix together mayonnaise, water, garlic, salt and pepper;
spoon a thick line of the mayonnaise mixture on plate in a wavy line (see my
photograph).
Serve salmon lox garnish with
