This is an easy artichoke appetizer that can be made
ahead of time,
simply toast baguette bread
slices ahead
make the artichoke topping ahead of time also...
spread the artichoke mixture on the prepared crostini and serve.

Artichoke Crostini Appetizer recipe and photograph

Makes 18 - 20 appetizers
1 baguette sliced 1/2" thick oil for brushing on the baguette
6-1/2 ounce jar marinated
artichoke hearts, drained 1 clove garlic, chopped
1 tablespoon white wine vinegar 1/4 cup extra-virgin olive oil Salt & Pepper to taste
1/4 cup arugula leaves, thinly sliced 1/4 pound deli Turkey
Pastrami, cut into thin strips
cracked black pepper for garnish
Brush baguette slices on both sides
lightly with oil; bake on a sheet pan at 350° for 7 minutes
or until lightly toasted. Make ahead if desired.
Puree marinated artichokes, chopped
garlic, white wine vinegar, 1/4 cup extra-virgin olive oil, salt and
pepper in a blender or food processor. Make ahead, cover and refrigerate if
desired.
Spread artichoke mixture on toasted
crostini
slices, top with arugula leaves
and turkey pastrami, sprinkle with cracked pepper and serve.
