I love
salted roasted pistachio nuts, they are in the same family as
cashews...
no wonder they are good!
This is a delicious cheeseball appetizer combining the flavors of mild
softened cheeses with a
Port wine enclosed around sweetened fruit rolled in salted
nuts.... yum!
Just pop a cheeseball in your mouth and enjoy along with a good bottle of
wine or
your favorite beverage.
This cheeseball appetizer travels well,
I have made it many times and taken to parties and different events.

Mini CheeseBall Appetizers

Makes 20
1/2 cup Pistachio nuts, finely chopped 4 ounces Chevre cheese, softened 2 ounces cream cheese, softened
1-1/2 tablespoons Port wine Kosher salt to taste 1 (6-inch x 6-inch) plastic wrap
1 pound seedless grapes, red or green
Place Pistachio nuts in a small bowl; set aside.
In a larger bowl mix the two cheeses with the port wine, and salt according to
your taste. Place 1 teaspoon of the mixture on the plastic wrap in the palm of
your hand; add a grape completely covering it with the cheese by forming into a
mini cheese
ball. Roll
in pistachio nuts coating
thoroughly. Repeat this process for each grape; refrigerate until firm.
Set each cheeseball on a platter and serve.
