Angel Hair Pasta Nests







Men seem to love angel hair pasta, Italian for Capellini because it is long and very thin
I have three men in my immediate family who always request this particular pasta over any other.  

This recipe is a unique way to serve these cute little pasta nests by browning them first 
in a skillet then finishing them in chicken broth.  
Spoon a filling of your choice in the center of the nests, 
I prefer shrimp with a cream sauce to serve this delicious entree.

Angel Hair Pasta Nests

Serves 6

6 Colavita Angel Hair pasta nest (1-1/2 ounces per person)
1 tablespoon extra-virgin olive oil
6 cups chicken broth
3/4 cup heavy cream, warmed
1/4 cup
salad shrimp or larger shrimp if desired
1 teaspoon dried Thyme leaves
6 basil sprigs for garnish, optional

Put Colavita angel hair nests in a deep skillet with olive oil over medium heat and brown for 2-1/2 minutes each side.  Drain and discard the oil; add chicken broth and completely submerge the angel hair nests; bring the chicken broth to a boil. Cover and cook 4 minutes.  The angel hair nests will separate but don't worry, this is normal.  To re-form them, drain the chicken broth and divide the angel hair pasta equally among 6 teacups.  Twirl the angel hair in each cup with a long-tined fork, slip off the tines of the fork onto individual serving plates shaping each one into a nest.  Spoon the warmed cream around the angel hair pasta nests, add shrimp and thyme leaves.  Garnish with fresh basil sprigs and serve.

Wine recommendation:  Pinot Gris, Chardonnay
